Yuzu - Citrus junos
Yuzu is grown for its rind rather than its juice volume, and the aroma is unlike any other citrus: floral, sharp and instantly recognisable in Japanese and Korean cooking. Citrus junos is also the toughest citrus in the cold, tolerating frosts that would kill a lime or a Tahitian lemon, which makes it one of the few useful citrus for tableland and cool southern gardens. The tree is slow, distinctly thorny and takes a few years to crop, but a mature one produces reliably every autumn.
Why Yuzu
Cold hardiness: The most frost-tolerant citrus in common cultivation, suited to cool districts where other citrus fail.
Culinary value: The knobbly yellow rind is the prize, used for zest, ponzu and preserving.
Autumn ripening: Fruit colours from green to gold through autumn and into early winter.
Spring perfume: White flowers in spring are strongly scented and heavily worked by bees.
Compact tree: Slow growth keeps it small enough for a courtyard or a large container.
Ideal Applications
Chef and kitchen gardens: Planted specifically for a fruit that is expensive and hard to source fresh.
Cool-climate citrus planting: The realistic choice in Victoria, Tasmania and the NSW tablelands.

Soil & Drainage: Free-draining, slightly acidic loam with good organic content. Waterlogging is the main cause of failure, so raise the planting position on heavy soils.
Establishment Care: Water deeply twice weekly through the first two summers and mulch thickly to keep the shallow feeder roots cool. Feed with citrus fertiliser in late winter and late summer, and shelter young trees from severe frost for the first couple of winters even though mature plants are hardy.
