Pink Ice Finger Lime - Citrus australasica ‘Pink Ice’
The selling point here is inside the fruit: ‘Pink Ice’ produces rose pink juice vesicles that spill out of a cut finger lime like beads, and they hold that colour on the plate. In the wild Citrus australasica grows as an understorey shrub in subtropical rainforest, which explains two things that surprise people: it copes with dappled shade far better than an orange or a lemon, and it resents hot dry wind. The plant itself is thorny, fine leaved and slow, so it is worth siting well the first time.

Rose Pink Pearls: Cut fruit releases pink vesicles that are used raw as a garnish rather than juiced.
Rainforest Origin: As an understorey species it accepts filtered light where most citrus will not crop.

Soil & Drainage: Free draining, humus rich, slightly acidic soil. Surface roots are fine and shallow, so avoid cultivating around the base and never let the ground bake bare.
Establishment Care: Keep a thick organic mulch over the root zone and water consistently through the first two summers, as drought stress causes fruit drop. Feed little and often with a citrus fertiliser during the warm months, and shelter young plants from frost and hot westerly wind.
