Olive - Olea europaea
The olive is the default evergreen for hot, dry, reflective sites in Australia. Olea europaea carries small grey green leaves with silver undersides that flicker in wind, on a trunk that gnarls and buttresses with age into the most sculptural feature in most gardens. It handles drought, salt wind, alkaline and rocky ground, and it can be clipped hard into hedges, balls and standards or left to build a natural spreading crown.
Why Olive
Silver Grey Foliage: The two-toned leaf gives a soft shimmering canopy that reads quite differently from the dark green of most evergreens.
Heat and Drought Tolerance: Bred by climate for long dry summers, it survives on rainfall alone across most of southern Australia once established.
Sculptural Trunk: Older trees develop fluted, hollowed and buttressed trunks that become the focal point of a garden.
Takes Clipping: Responds to shearing and hard pruning, which is why it is used for hedges, topiary and standards.
Fruit Behaviour: Heavy crops drop and stain paving, so keep it back from paths and pool surrounds, and collect fallen fruit in districts where self-sown olives are a declared weed.
Ideal Applications
Mediterranean Courtyard or Grove: Grouped or lined along a drive it sets the tone of an entire garden style.
Clipped Screening Hedge: Planted close and sheared it makes a dense grey green wall to around 3m.
Coastal and Exposed Sites: Salt wind and poor sandy soil barely register.
Large Containers and Rooftops: Slow growth, low water demand and wind tolerance make it a long-term planter subject.

Soil & Drainage: Free-draining soil of almost any type including rocky, sandy and strongly alkaline ground. The one thing it will not accept is waterlogging, so raise the planting position on heavy clay
Establishment Care: Water deeply every ten to fourteen days through the first two summers rather than frequently and lightly, as shallow watering builds a shallow root system. Mulch with coarse gravel or bark held clear of the trunk, and hold off any shaping cuts until after the first full growing season.
