Coratina Olive - Olea europaea ‘Coratina’
Growers plant ‘Coratina’ for oil with backbone. This southern Italian variety from Puglia is known for high polyphenol levels, which give a robust, peppery, green oil with excellent keeping quality and antioxidant content. Olea europaea ‘Coratina’ makes a vigorous, upright, densely leafy tree with grey-green foliage, and it is one of the more cold tolerant commercial olives, which has made it a mainstay of Australian groves in cooler inland districts.
Why Coratina Olive
Robust oil: High polyphenol content produces a peppery, bitter-edged oil that stores well and is prized by oil judges.
Cold tolerance: Copes with colder inland winters better than many Mediterranean varieties once established.
Strong vigour: Grows away quickly and forms a substantial, well-structured tree.
Reliable yields: Recognised in Australian groves as a consistent cropper rather than a strongly alternate bearer.
Good pollinator: Widely used to improve fruit set in mixed variety plantings.
Siting note: In some districts olive seedlings spread from dropped fruit, so collect windfall in gardens next to bushland.

Establishment Care: Water deeply once a week for the first two summers so the roots follow the moisture downward rather than staying shallow. Mulch to 75mm held off the trunk, keep a weed-free circle around the base and remove basal suckers as they appear.
